Shredded Pork with Milagro Mole

Serves 3 to 4

1 2-lb. pork loin
1 bottle Big Acres Milagro Mole  
Rice, cooked
Sour cream and guacamole for garnish

Rinse meat, pat dry and trim fat. Brown meat on all sides in medium skillet. Place meat in slow cooker (crockpot) and cook on low for 8 to 10 hours. (Alternatively, you may roast the meat in a covered pan in the oven at 250 degrees for 8 hours.) When loin is cooked, drain most of the juice, leaving just a little for flavor, then pull pork apart using two forks. Pour Milagro Mole over pork and mix gently to cover meat. Warm it up in the crock pot and serve over rice with sour cream and guacamole and a fresh green salad.

You may also use this pork in tacos. Try this recipe with chicken or your leftover turkey too!
