BIG ACRES SAUCES SPICES UP HOLIDAY ENTERTAINING WITH NEW CHIPOTLE PEANUT SAUCE

San Carlos, CA, September 26, 2003 — A new Chipotle Peanut Sauce from Big Acres'Sauces fusing the Latin and Asian flavors of chipotle peppers, roasted peanuts, hints of ginger, maple syrup and the tang of lime juice is available this October from Melanie's Fine Foods, Inc. and select retail locations. This sauce is uniquely blended to deliver a spicy, versatile, and tasty kick to chicken, pork, beef, salads, vegetables, and tofu.

Big Acres Chipotle Peanut Sauce is perfect for quick weekday meals, lively special occasions and festive events this holiday season and all year round. The sauce can be served hot or cold as a condiment for hors d'oeuvres, relish trays or as a marinade or grilling sauce for meat or fish. Toss it with a crunchy Chinese chicken salad or use it as a main course in a mouth-watering Spicy Chipotle Peanut Chicken Tostada (recipe attached).

Containing only all-natural ingredients and free of preservatives, MSG, dairy and other additives, this new sauce rounds out the Big Acres Sauces line that includes our award-winning Teriyaki Marinade, Hot & Spicy Barbeque Sauce and Rich & Mild Barbeque Sauce.

Recipe

Spicy Chipotle Peanut Chicken Tostadas
Serves 6

2 medium tomatoes, seeded and diced
3/4 cup green onions, sliced
1/2 cup fresh pineapple, diced
2 cups Napa cabbage, shredded
1 cup jicama, shredded
1/2 cup red peppers, julienned
1.5 lbs grilled chicken, cut into strips
1 cup crumbled queso fresco or mild feta
1/4 cup chopped roasted peanuts
1 bottle Big Acres Chipotle Peanut Sauce
12 yellow corn tortillas or your favorite store-bought tostada shells
Peanut oil

Lightly fry tortillas in peanut oil and drain on paper towels. Set aside. (Note: Store-bought tostada shells are already fried.) In small bowl, mix 1/2 tomatoes, 1/2 green onions, pineapple, cabbage and jicama. Toss with 1/2 bottle of peanut sauce and set aside. Place warm chicken in large bowl and toss with remaining peanut sauce. Divide vegetable and fruit mixture evenly and place on tortillas. Place chicken on top of vegetables and fruit. Sprinkle remaining ingredients in the following order: tomatoes, onions, cheese, peanuts and serve immediately.

Variation: Use mini corn tostada shells to create tasty appetizers!
