America's Zesty Best Professional Food Competition
On June 17, more than 750 products competed in the America's Zesty Best
competition in Orange County, CA. The competition is held during the
America's Zesty Best Food Show, a spicy and hot food show produced by
Jazz Foods. Big Acres Chipotle Peanut Sauce won 2nd place in the
Condiment/Dressing category! Big Acres Sauces now has 6 product and

People often ask us how they should use the Chipotle Peanut
Sauce. We say "put it on everything"! Brush it on your grilled chicken,
pork, beef, tofu, veggies. Dip your meat or veggies. Use it as a salad
dressing over mixed greens with Mandarin oranges and crushed nuts. Dip
your teriyaki chicken skewers into warmed peanut sauce. We have loads

page, and you might want to try the recipe below.
Melanie Tours the East Coast
On July 10th through 12th, Melanie & Kent are exhibiting at the
Summer Fancy Food Show in New York where retailers and distributors
come to shop at the booths of more than 2100 manufacturers. After the
show, Melanie is traveling south on the East Coast where she'll cook at
some of her favorite stores. Please drop by to say hello and sample Big

Summer's Mouth-Watering Recipe
Melanie loves this recipe and is serving it as an appetizer on the 4th!
The salad can be made ahead of time and then tossed in the sauce just
before serving.
Spicy Chipotle Peanut Chicken Tostadas
Serves 6
12 yellow corn tortillas or your favorite store-bought tostada
shells
Peanut oil
2 medium tomatoes, seeded and diced
3/4 cup green onions, sliced
1/2 cup fresh pineapple, diced
2 cups Napa cabbage, shredded
1 cup jicama, shredded
1/2 cup red peppers, julienned
1 bottle Big Acres Chipotle Peanut Sauce
1.5 lbs grilled chicken, cut into strips
1 cup crumbled queso fresco or mild feta
1/4 cup chopped roasted peanuts
Lightly fry tortillas in peanut oil and drain on paper towels.
Set aside. (Note: Store-bought tostada shells are already fried.) In
small bowl, mix 1/2 tomatoes, 1/2 green onions, pineapple, cabbage,
jicama and red peppers. Toss with 1/2 bottle of peanut sauce and set
aside. Place warm chicken in large bowl and toss with remaining peanut
sauce. Divide vegetable and fruit mixture evenly and place on
tortillas. Place chicken on top of vegetables and fruit. Sprinkle
remaining ingredients in the following order: tomatoes, onions, cheese,
peanuts and serve immediately.
Variation: Use mini corn tostada shells to create tasty
appetizers!
