Three years ago, Kent & Melanie Yunk left their high tech careers and formed Melanie's Fine Foods to bring you Big Acres Sauces. We started out with a handful of customers in Northern California and now you can find our products at gourmet retailers in 35 states! Mother's Day Meal
Treat your mom to this fabulous brunch on Mother's Day!

Grilled Scallop Tacos with Mango Peach Chile Sauce
Serves 6

1 medium yellow onion, coarsely chopped
1 red bell pepper, coarsely chopped
1 dozen small corn tortillas
2 to 3 pounds sea scallops (about 24 scallops) - Halibut or Mahi-Mahi works great too!
1 bottle Mango Peach Chile Sauce, chilled
1 bunch green onions, chopped with greens
Shredded romaine lettuce
Shredded Jack or Mexican cheese
Fresh cilantro, chopped
Natural sea salt
Olive Oil

Lightly toss onions and bell peppers with salt and olive oil to taste. Grill in basket over medium-high heat until onions are translucent. Wrap tortillas in foil and set on edge of grill to warm. Meanwhile, lightly oil and salt scallops and grill over medium heat on well-oiled grill, just a couple of minutes on each side, until just cooked all the way through. (Alternatively, toss scallops in non-stick coated grill basket to avoid sticking.)

Set out all ingredients buffet style and allow your guests to build their own tacos and pour on the Big Acres Mango Peach Chile Sauce. Serve immediately.

Melanie's Non-Refried Mexican Beans
Serves 6

2 lbs pinto beans, rinsed with stones removed
1 onion, chopped
1 tsp. ground New Mexican chile powder (or more if you wish)
1 small can chopped green chiles
2 cups organic chicken or veggie broth
Olive oil
Salt and pepper

Cover beans with water in large bowl and soak overnight. The next day, saute onion in olive oil in large stock pot for a few minutes. Add chicken broth, green chiles, and chile powder. Drain and rinse beans and add to stock pot. Bring to boil, then reduce heat, cover and cook for 2 to 3 hours or until beans are tender. Stir occasionally to prevent sticking. Use potato masher to mash some of the beans. If beans are too watery, remove lid and simmer to reduce liquid. Salt and pepper to taste and serve with your favorite salsa or pico de gallo.
