What's a Chipotle Pepper?
Chipotle peppers are the special ingredient that makes our Hot
& Spicy Barbeque Sauce so spicy! Pronounced "chee-POT-tleh", the
smoked red jalapeno chili pepper is also known as chili ahumado
(also referred to as "tipico", the preferred variety) or morita
(meaning "little blackberry" in Spanish and most commonly
found in the US). This pepper is one of the most popular
chilies used in the United States today and makes up almost 20%
of Mexico's jalapeno crop. Chipotle peppers are typically used
to flavor soups, stews, sauces, and salsas.
The color of chipotle peppers ranges from tan to coffee color and they
are 2 to 4 inches in length and about one-inch wide. Chipotle
peppers come in several forms: powdered, canned in "adobo"
sauce, pickled, or whole and range in medium heat to between 5,000 and
10,000 Scoville Units.
Chipotle peppers have been traced to northern Mexico City, prior
to the Aztec civilization. Evidently, jalapenos were difficult
to dry so the Aztecs vine ripened them until they turned red and then
slow smoked them over a smoldering fire, creating a rich, bold, smoky
flavored chili. The ancient Mexican civilization used the same smoking
process to dry their meat.

Jill's Barbeque Chicken Pizza
Jill says this meal is great for a quick, weeknight dinner. . . .
3/4 c. Big Acres Hot Spicy Barbeque sauce
Boboli Pizza Crust (2 individual or 1 family size)
Grilled or rotisserie chicken, shredded
chopped green onions
shredded mozzarella
Place Boboli® pizza crust on pizza stone or cookie sheet, spread
with Hot & Spicy Barbeque Sauce, spread shredded chicken, green
onions and shredded cheese over the top and bake at 350 degrees until
cheese is melted and bubbly.
Variation: Use lahvosh cracker bread or your favorite pizza dough recipe.
Cook at grill at 350 degrees until done.
